Already missing india🇮🇳 and nepal🇳🇵! 🙏🏻 so i cooked today with this south indian curry i brought from jodhpur (rajasthan🖤, india). first of all, cook onion till half brown, add garlic and ginger powder and cook for 3-4 minutes. 2-3 tsp of south indian curry, mix and cook for 2-3 minutes. add here vegetables such leaves of coriander, tomatoes, fresh green chili or whatever (this time i used mushrooms and tomatoes). cook it all and finally add textured soy protein previously hydrated with soy sauce and also add water to the mix. leave it cooking for 8-10 minutes till everything is tender. time to enjoy!!!! to serve with rice, chapati or whatever you want.

echando de menos india🇮🇳 y nepal🇳🇵... así que cociné hoy con estas especias de south indian curry que traje de jodhpur (preciosa tierra de rajastán, india). se cocina primero cebolla, ajo y un trozo de jengibre, pero yo no tenía así que usé polvos de jengibre. se cocina hasta que la cebolla esté casi bastante dorada, y se añade de 2 a 3 cucharaditas del curry. mezclar y cocinar 2-3 minutos. añadir aqui vegetales como tomate, chili verde, hojas de cilantro, lo que se deseé (yo lo hice con tomates y champis). cocinar todo y finalmente añadir la soja texturizada previamente hidratada con salsa de soja y añadir a la mezcla agua. dejarlo cocinando todo 8-10 minutos hasta que esté tierno. servir con arroz, chapati o con lo que se prefiera🖤.

vegan smokey tahini jackfruit sandwiches

ingredients

smokey tahini jackfruit:
2 tbs tahini
2 tbs pure maple syrup
1 tbs tamari
1 tsp apple cider vinegar
1 tsp liquid smoke
roughly 1/2 cup shredded jackfruit
salt/pepper to taste

easy slaw:
2 cups shredded cabbage
2 tbs vegan mayo
1 tbs pickle brine
salt/pepper to taste

sauteed kale:
1 tbs olive oil
2 cups packed shredded kale

everything else:
4 buns
vegan mayo
mustard
and any other condiments you like

directions:
1. jackfruit: stir all ingredients together in a bowl. set aside.
2. slaw: stir all ingredients together in a bowl. set aside.
3. kale: heat olive oil, add kale, cook until wilted
4. toast buns

🇺🇸recently i have been asked how to stay healthy while traveling?!
here some tips: .
🍌take your own food with you: fruits, veggies, dips, dates, nuts, smoothies, juices...
.
🍌get a nice big cooler with filled with ice packs for the back seat while on a road trip. map your route and find a couple of good stops every day, either healthy restaurants, health food stores, or juice bars. stock up on goodies and meals and store leftovers and extras in your cooler.

🍌always stash something sweet. we often prepare a raw cake or energy balls to take along with us while traveling. it helps satisfy a sweet craving and boosts our energy
.
🍌if you’re at a friend’s or family member’s place, prepare your own food. on the pic this is what i prepared at my sister’s place for breakfast and our train trip

🍌get over food obsession. let go of food guilt. accepting what you ate (something you wouldn’t eat if you weren’t on the go) is the healthiest food move you can make.

🍌si tu es chez des amis ou si tu rends visite à ta famille, prépares ta propre nourriture. sur la photo, c’est ce que j’ai préparé pour le petit-déjeuner ou le voyage en train.

🍌ne te blâmes pas si tu manges des choses que tu ne mangerais pas si tu n’étais pas en voyage... l’acceptation et la patience sont les premiers pas pour le changement.
