recipe⠀
for the guacamole:⠀
-3 ripe avocados⠀
-3/4 cup of red onion ⠀
-1/4 cup of finely chopped unstemmed kale⠀
-1/4 cup of cilantro⠀
-juice of 1 lemon ⠀
-3 or 4 cloves of garlic chopped⠀

ingredients:⠀
250 g fresh spinach⠀
250 g all purpose flour⠀
a splash of water⠀
150 g cashew nuts⠀
50 g macadamia nuts⠀
2 tbsp nutritional yeast⠀
1/2 tsp salt⠀
4 tbsp truffle oil⠀

method:⠀
2. place the spinach leaves in a saucepan and sauté for 5 minutes. let cool down completely.⠀
3. place spinach in a food processor and process until creamy. add in little by little flour and splash of water and process until the dough sticks together. ⠀
4. cover the dough and let rest for 30 minutes.⠀
5. for the filling, place the nuts in a bowl and cover with boiling water. set aside for 30 minutes. ⠀
6. rinse the nuts and place them in a food-processor. add in a splash of water, truffle oil, salt and nutritional yeast and process until perfectly creamy. cover and set aside.⠀
7. using a pasta machine roll out the dough until it’s about 2 millimeters thick. ⠀
8. press a glass into the ravioli sheet and set the ravioli circles over a floured surface.⠀
9. each raviolo is made of 2 circles; put 1 tsp of truffle cream in the middle of a circle, moisten the edges of the dough with a pastry brush and cover with another circle. ⠀
10. press the edges with a fork so that it wont open while boiling.⠀
11. if you want them to be a little “al dente” let them dry out overnight on a floured surface.⠀

for the pasta dough:⠀
200 g of flour⠀
100 ml of water⠀
1 tsp olive oil⠀
1/4 tsp salt⠀

for the filling:⠀
tomato sauce⠀

instructions:⠀
first combine flour and salt in a bowl and form a hollow in the middle.⠀
mix water and olive oil in another bowl. then pour it into the hollow of the flour and stir with a fork.⠀
place the mixture on a floured surface and knead with wet hands to a smooth dough.⠀
then form a ball out of the dough, wrap it in cling film and let it rest in the fridge for about 1 hour.⠀
in the meantime, prepare the filling or pesto.⠀
remove the dough from the fridge and roll out thinly with a rolling pin on a floured surface.⠀
cut ravioli.⠀
then spread the filling with a teaspoon as a walnut-sized blob in the middle of half the amount of the ravioli .⠀
then moisten the edges of the stuffed ravioli with wet fingers. carefully place the second ravioli over the filled ravioli and press the edges.⠀
bring salted water to a boil in a large p*t and cook the ravioli for about 6-8 minutes.⠀
then remove the ravioli with a skimmer and drain well.

Beet fettuccine alfredo by @3.bunnies ❤️ recipe:⠀
ingredients ⠀
1 3/4 cup of almond milk⠀
3/4 cup of soaked cashews⠀
1/4 cup of nutritional yeast⠀
1 clove of garlic ⠀
1 thumb size piece of yellow onion⠀
1 thumb size piece of beet root⠀
2 tsp of lemon juice⠀
1 tsp of pink salt⠀
a few dashes of black pepper ⠀
3/4 cup of vegan parmesan⠀
16oz of fettuccine pasta⠀

how to make:⠀
1. combine all ingredients excluding parmesan and pasta into a blender. blend until smooth.⠀
2. in a small p*t on medium heat pour in sauce and add parmesan. lower heat and stir until cheese has melted.⠀
3. bring a large p*t of water to a boil and add pasta. cook until fork tender. drain and pour in sauce. garnish with chopped mint. serve and enjoy! #veganfoodspace #vegandinner #dinnerideas
