Heya friends! today i'm bringing you a cleaner version of the beloved potluck ramen noodle salad. i replaced the vegetable oil with avocado oil, subbed monk fruit sweetener for the sugar and packed it with extra veggies. and no mandarin oranges because - i just can't. this version is light, crunchy and yummy. tag a foodie friend who needs to try this recipe and tell me your favorite potluck salad in the comments.

ingredients

3 (3-ounce) packages chicken flavored ramen noodles
1 (12 ounce) package broccoli slaw

1/2 cup chopped red onion

10 ounces fresh or frozen corn (i used a mixture of both.) 1 cup frozen peas

1/2 cup monkfruit sweetener (see "food" tab on my blog for the brand i use.) 1/2 cup avocado oil

1/2 cup apple cider vinegar

1 cup sunflower seeds (optional)

directions

1) crush ramen noodles in a bowl. set the ramen seasoning packets aside.

2) add slaw, onion, peas, corn and toss.

3) in a microwave safe measuring cup, mix monkfruit, oil, vinegar and ramen seasoning packets. microwave on high for 1 minute.
4) pour hot dressing over slaw mixture and toss.

5) refrigerate for 1-2 hours before serving.

6) garnish with sunflower seeds and/or green onion tops before serving.

Quizás se ve elaborado, pero es una idea muy simple teniendo en cuenta que sólo hay que cocinar lo que estaba congelado👀

aprovecho también de mencionar que tener vegetales congelados es una buena opción y muy práctica ya que sólo los pones a cocinar unos minutos y quedan listos😥

healthier ceaser salad
4 servings
.
ingredients
2 cloves garlic, grated, divided use
3 tbsp. fresh lemon juice
¼ tsp. sea salt (or himalayan salt)
2 tbsp. + 2 tsp. olive oil, divided use
2 bunches raw kale, washed, dried (about 1 lb.)
4 slices low-sodium sprouted whole-grain bread, cut into 1-inch cubes
½ cup shaved parmesan cheese
i also added chicken breast!

instructions
preheat grill or broiler on high.
to make dressing, combine half of garlic, lemon juice, and salt in a small bowl; whisk to blend.
slowly add 2 tbsp. oil, whisking continuously until blended. set aside.
combine remaining 2 tsp. oil and remaining half of garlic in a small bowl; mix well. set aside.
remove central rib and stem from each kale leaf. brush leaves with half of oil and garlic mixture. set aside.
brush bread with the other half of oil and garlic mixture. set aside.
grill kale for 30 seconds to 1 minute on each side, or until slightly brown and crispy. (kale might need to be grilled in batches.) cut (or tear) into bite-sized pieces. set aside.
grill bread for 1 to 2 minutes on each side, or until brown and crispy. cut into large cubes.
combine kale and bread in a large serving bowl. drizzle with dressing; toss gently to blend.
sprinkle with cheese.

salad sometimes gets a bad rep for being bland and boring. but not if you think outside the box a little, because there are literally hundreds of ways you can switch this nutritious meal up! this is a chef's salad i threw together, and it was delicious! the base is a spring mix, and the toppings include hard boiled eggs, turkey breast, carrots, tomato, cucumber, avocado, and feta cheese. the dressing i made with 0% f*t plain greek yogurt, @smakdabmustard (jalapeno honey flavor), salt, pepper, and garlic.

some other my my favorite ingredient combinations include:
1. spinach, strawberries 🍓, pecans, feta.
2. kale, reduced sugar craisins, pumpkin seeds, brussels sprouts.
3. arugula, red onion, steak bites, feta, balsamic.
4. spinach, mint leaves, watermelon 🍉, cucumber.

get creative, because salads are nutritious and delicious if you put a little thought into them. enjoy! 🥗🥗🥗
