Only a few more days until i’m going to the amalfi coast. do you have tips for must-see places, spots or restaurants? it will be my first time there and i’d be happy about your recommendations 🧡
to get into the mood i made some pasta with meatballs. it’s really easy to make. i prefer ground turkey or chicken but of course you can use any meat you like.

for 4 portions you need:
500g pasta of your choice
500g ground meat
50g breadcrumbs
4 tbsp olive oil
1 onion
1 carrot
2 sun-dried tomatoes
1 onion
50 ml dry red wine
400g canned tomatoes
fresh parsley, oregano
salt, pepper & pinch of sugar
parmesan cheese

mix the ground meat of your choice with breadcrumbs, salt, pepper and finely chopped parsley. shape into 12-14 balls using moist hands.
finely chop the onion, carrot and the sun-dried tomatoes. heat 2 tbsp of olive oil in a large saucepan over medium-high heat, add meatballs and fry for about three minutes until they are browned over. take meatballs out of the pan and set aside.
heat 2 more tbsp of olive oil and sauté the chopped vegetables for about 2 minutes. add salt, pepper, a pinch of sugar and oregano. deglaze with red wine and let it simmer for 2 more minutes. then add canned tomatoes. once the sauce comes to a boil add meatballs and let it simmer over low heat with the lid on. turn meatballs occasionally.

cook pasta until al dente according to package directions. serve with parmesan cheese.
