That seasonal vegetable friendly meal - done
the winters are upon us. whilst it's still quite warm in the day, the evenings have become a little nippy & warm wholesome food is what i crave
fresh methi/fenugreek has flooded the market as have fresh peas! i made a really hearty yet simple meal making use of these seasonal goodies
clockwise :

1. that fresh methi matar/fenugreek & peas
i plucked & washed the fresh methi, keeping the tender stalks on, discarding the thicker stems
i tempered ghee with whole garam masala, dried red chillies, ginger-garlic pastes & onions. i added in lots of tomatoes & once pulpy, i added in coriander powder, cumin powder, red chilli powder, salt, turmeric powder & cooked the methi in this till done

i do not cut the raw methi leaves. once the methi is fully cooked, i picked up ladelfuls & snipped with scissors. trust me try this tip! you will get bite sized methi without the crazy bitterness

2. that akkhey masoorachi aamti/whole pink lentils
i pressure cooked whole pink lentils/akkha mansoor in salted water along with asafoetida for 2 whistles & set aside
i tempered coconut oil with mustard seeds, cumin seeds, curry leaves, lots of green chillies, garlic & onions & added this tempering into the cooked lentils along with freshly scraped coconut & fresh coriander & simmered till thick

3. those whole wheat parathas

4. that salad 😂: onions & lime
the "bitterness" of the methi/fenugreek was perfectly balanced by the sweetness of the coconut in the aamti

i feel everything in a meal, like in our lives, must be balanced. don't you agree?

Mixed dal fry with green pea pilav

do you buy indian spice mix? which is your favourite one?

i would like to share a few of my favourites with you. garam masala and roasted curry powder are obviously staples! i also like using kitchen king masala, tandoori masala, chana masala, tikka masala and chat masala.
these make the perfect marinade for roasting vegetables and also add flavour to dal, stews and even burgers.

ingredients:
beluga lentils: 1 tin draines
yellow lentils: 1/4th c
red lentils: 1/4th c
onions: 1 sliced in quarters
tomatoes: 2 small
fresh coriander: 1c
ginger: 1 t grated
dried red chilles: 2
cumin seeds: 2 t
asafoetida: 1 t
kitchen king masala: 3-4 t
salt: 2 t
olive oil: 1 t
water: 3 c divided
for tempuring:
coconut oil: 1 t
red chilly powder: 2 t
mustard seeds: 1 t
method:
1) cook yellow lentils in a pressure cooker till done
2) bring 2c water to boil in a pot. when water comes to boil add onions and tomatoes and cook till soft (5-6 minutes).
3) drain and add to a blender with fresh coriander and kitchen king masala. blend to form a paste
4) heat olive oil in a pan and add ginger, cumin and dried chilly. stir for 1 minute and add the paste into the oil. cook stirring for 5-6 minutes till the paste thickens.
5) add red lentils and 1 c water. bring to boil and then let simmer with lid on for a few minutes till the lentils begin to soften but are not completely cooked.
6) add beluga lentils and yellow lentils and cook on a low flame till dal is cooked done.
7) in a separate pa heat coconut oil. when oil is hot add mustard seeds and red chilly powder. immediately pour the oil over the dal and serve with a lemon

Tandoori dal

love tandoor? make your regular basic dal into this sizzling tandoori dal by following these easy steps.

ingredients:
oil
ghee
onion seeds
garlic
ginger
hing
green chili
chopped onion
turmeric powder
red chili powder
garam masala
coriander powder
tomato
dal
water
coal
salt
method:
soak the dal in some water and salt. cook it like usual.
now take a kadhai and add some ghee and oil to it.
add onion seeds and chopped garlic into the pot. stir well.
add in some chopped ginger and green chilli and stir.
then add some chopped onion along with turmeric powder, salt and red chili powder. stir well. add some hing and chopped tomatoes. stir.
then get the cooked dal and pour it into the kadhai.
give it a nice stir. add water to get the right consistency. add some salt to taste.
heat the koyla on the gas stove. take a small steel bowl and place it on top of the dal. put the koyla in the bowl.
drizzle a few drops of ghee on the koyla and immediately cover with a lid.
lift the lid after a few minutes and remove the koyla and serve hot with some jeera rice.
